We've revitalised a landmark restaurant in Midleton, and The Fork & Wheel is looking for an experienced and ambitious Sous Chef to help lead our kitchen team. What You'll Be Doing:
- Supporting the Head Chef in the day to day running of the kitchen, stepping up in their absence.
- Preparing, cooking, and presenting dishes to our consistently high standards.
- Having real input into menu development, not just execution, bringing your own ideas to the table.
- Working closely with Vas on commercial and strategic decisions for the kitchen, including food GPs, costing, and supplier decisions.
- Contributing to wider business conversations beyond the kitchen, as a genuine partner in how The Fork & Wheel grows.
- Leading and motivating the kitchen team during service, keeping sections running smoothly under pressure.
- Maintaining a spotless and organised kitchen, ensuring efficiency and cleanliness.
- Adhering strictly to all food safety and hygiene regulations, guaranteeing top-notch quality and safety.
- Assisting with stock control, ordering, and managing supplies to keep our kitchen running smoothly.
- Supporting the training and development of junior kitchen staff.
What We're Looking For:
- Proven experience as a Sous Chef or strong Senior Chef de Partie ready to step up, ideally within a fast-paced restaurant setting.
- An innovative approach to food, with ideas and creativity to bring to menu development.
- A commercial mindset, with an understanding of food GPs and how kitchen decisions impact the wider business.
- Strong leadership skills with the ability to guide and support a team during busy service.
- A strong grasp of food safety regulations and best practices.
- The ability to thrive under pressure and excel as a vital part of a cohesive team.
