Key Responsibilities
- Prepare, cook and present authentic and contemporary Mediterranean-inspired dishes to the highest five-star standards.
- Take responsibility for your designated kitchen section and ensure it operates efficiently.
- Complete daily mise en place within agreed timeframes.
- Supervise, support and mentor Demi Chefs and Commis Chefs.
- Delegate tasks effectively and ensure work is completed to the required standard.
- Maintain exceptional food quality, consistency and presentation at all times.
- Ensure all food is correctly labelled, dated and stored in accordance with HACCP procedures.
- Monitor stock levels, organise stock rotation and complete daily requisitions.
- Minimise food waste and contribute to effective food cost control.
- Assist with menu planning and the development of new dishes.
- Maintain a clean, organised and hygienic work environment.
- Report any maintenance, hygiene or health and safety concerns promptly.
- Ensure full compliance with HACCP, food safety and health & safety regulations.
- Work collaboratively with colleagues across all kitchen sections and departments.
- Assist with banqueting and special events as required.
- Attend all mandatory training sessions and support the ongoing development of junior team members.
- Contribute positively towards departmental targets and the continued success of the Kitchen team.
The Successful Candidate
The ideal candidate will have:
- A minimum of two years' experience as a Mediterranean Chef de Partie or in a similar role.
- A recognised professional cookery qualification.
- Strong knowledge of Mediterranean cuisine and cooking techniques.
- A thorough understanding of HACCP and food safety procedures.
- Previous experience supervising or mentoring junior chefs.
- Excellent organisational and time management skills.
- The ability to work efficiently under pressure in a busy kitchen environment.
- A creative approach to food preparation and presentation.
- Excellent communication and interpersonal skills.
- A positive attitude with a strong work ethic and attention to detail.
- The ability to work effectively both independently and as part of a team.
- Fluent spoken and written English.
