Oku, Adare Manor's intimate and refined sushi dining experience, is seeking a dedicated and passionate Food & Beverage Assistant to join our team.
Inspired by the Japanese philosophy that "a single brushstroke can tell a story," Oku brings together precision, artistry, and purity of flavour. Named after the Katakana rendering of "oak," Oku pays homage to the meaning of Adare - "ford of the oak."
Open for dinner service, Friday through Tuesday, Oku welcomes residents and nonresidents to indulge in an exceptional culinary journey.
Under the direction of our sushi chef, Chef Jan Vincent Amo, each dish blends timehonoured Japanese techniques with contemporary artistry, celebrating both authentic flavours and Ireland's natural bounty. From the crisp harmony of Bluefin Tuna Shibaki to the earthy depth of Truffled Wagyu Donburi, every plate is prepared with thoughtful intention.

Key Responsibilities
As a Food & Beverage Assistant in Oku, you will:
Guest Service & Experience
- Provide a warm, gracious welcome to all guests, ensuring a luxury fivestar dining experience from arrival to departure.
- Present menus, answer questions, and offer informed guidance on dishes, ingredients, and Japanese dining traditions.
- Support the delivery of smooth, elegant service throughout every stage of the meal.
- Anticipate guest needs, preferences, and expectations, ensuring personalised and attentive care.
Restaurant Operations
- Prepare the dining room ahead of service, ensuring cleanliness, readiness, and attention to detail in line with Adare Manor standards.
- Assist with setting and resetting tables, maintaining a refined and orderly environment.
- Deliver food and beverages with precision, timing, and finesse.
- Maintain a deep appreciation for Oku's culinary identity, reflecting its philosophy through service excellence.
Collaboration & Teamwork
- Work closely with the Oku restaurant team, including chefs and management, to ensure seamless coordination during service.
- Communicate guest feedback or special requests clearly and promptly.
- Support colleagues by contributing to a positive, respectful, and engaged work environment.
Compliance & Standards
- Ensure adherence to all health, safety, and hygiene standards.
- Follow internal procedures regarding allergen awareness, HACCP requirements, and responsible service of alcohol.
- Uphold the values, service ethos, and presentation standards of Adare Manor at all times.
About You
We are looking for someone who:
- Has previous experience within a luxury dining environment (sushi or fine dining experience is an advantage but not essential).
- Has exceptional communication and guestservice skills.
- Demonstrates professionalism, enthusiasm, and a commitment to excellence.
- Thrives in a fastpaced, detailoriented environment.
